Hell’s Backbone Grill & Farm serves a blend of Western Range and Southwestern flavors enhanced by their daily, farm-fresh harvests. This “Four Corners Cuisine” was developed by the owners, Blake Spalding and Jen Castle, who were recently nominated as Best Chefs in the Mountain Region by the James Beard Foundation. For over twenty years, the restaurant has been a leader in organic, locally produced, and seasonally appropriate cuisine. What’s not grown on the restaurant’s six-acre farm two miles away is often sourced from Boulder’s heirloom orchards, local rancher’s grass-fed and finished beef, Utah micro-brewed beers, and more. Come enjoy award-winning, delicious food in one of the most majestic and wild areas in the world. The restaurant is open seasonally, typically from mid-March until the first weekend in December.
